Where can I change the <IMAGE_CATEGORY>? I dont wan't the [ ___ ] and give it a style class.

you can change the format in options inside your admin.

to assign a class just surround <IMAGE_CATEGROY> with a span. ie,

<span class="category"><IMAGE_CATEGORY></span>
