When I use <EXIF_CAPTURE_DATE> my settings look like this...
2006:09:16 18:42:13
I would rather is look like this if possible..

No, I ran into the same problem today.
I found that to control the <IMAGE_DATETIME> tag in the image_template.htm you could control the look of that throught the blog admin.
(Options - Template - Date Format and if you input F jS, Y your date will be August 26th, 2006 (the S it the th, rd, nd or st at the end of the date number - if you just want 26 instead of 26th, just remove the S.)
But the <EXIF_CAPTURE_DATE> - that's another kettle of fish. I don't know how to control that. I will wait for an answer as well.

EXIF data is taken from the image and not manipulated by the script
you might buy another camera to get other formats ;=)
Or just hack tag supporting code and do it on own hand.

hang on... There's an add-on called Extra EXIF Info (http://www.pixelpost.org/v1/index.php?x=downloads&details=69). It adds extra EXIF tags and one of them say:
Capture Date Formated - Formats the capture date in the format specified in the admin options.
That sounds like what you're looking for.

Using the extra EXIF works perfectly for formating the date stamp.
