Login to your admin panel and within the OPTIONS menu you will find a THUMBNAILS submenu.

I have it set for 5 but only 2 show.

I am using the "simple" template that comes in the zip
Would I still have to change the tags in it??????????

Yes, as the simple template doesn't have the paged archive browse tag in it by default.

You can only set number of thumbs per row by setting up width of layer which contains that thumbs.
